Red face My name is Bailey I'm a foodie & I need more recipes....

Homemade key lime pie:

Vegetarian organic black bean soup with fresh avocado & asparagus topped with a tablespoon of organic cheese & sour cream:

Shoestring fries:

Ham, egg and cheese breakfast sandwich:

Just a really good damn burger with just about everything you can imagine on it:

Avocado & salmon salad with Thai tomato coconut soup:

If you don't know that this is I feel bad for you:

Smothered steak (caramelized mushrooms, onions and swiss cheese), italian green beans, southwest pasta salad, ceasar salad and grilled corn on the cob:

Yummm dinner! Pan seared salmon, avocado, peach and pineapple salsa, sour cream, sprinkled with cumin & chili powder:

Beef & cheese enchiladas white girl style:


And today I am boiling crab legs!!! My FAVORITE!

Just a little bragging thread lol

I am ALWAYS looking for new recipes though so PLEASE if you have any that you would like to share feel free to post!!!

Bailey... I love black beans... Mmm with rice... never thought of topping it with cheese and avacado... not really a fan of cheese but maybe some swiss.

That salmon with avocado dish looks good too... Oh, and Bailey... My old roommate had that same dinnerware set... Thought that was cool.

Mokoa... I love the smell of homemade bread baking in the oven... Mmm take it out and slice it... Mmm... Apply butter... Heaven

I would love to come over and watch it rise... Your bread dough, that is... Hehehe.

I may need to take some lessons!! That is one area I have yet to dabble in...baking....I think because I know that bread is one of my weak points. My favorite treat is fresh bread dipped in olive oil and balsamic vinegar....damn you Mokoa now I am want to go give in!! Your bread looks A-mazing!! My mouth is watering!

Bailey, I have a great recipe for pork loin ribs. Takes 1 ½ hours in oven and 30 minutes more for the BBQ sauce and 10-15 minutes on the grill. What will we do during that 2 hour time period?? Hmmmmm LOL!!

Those enchiladas look amazing!!

My favorite food is Chicken Parmesan I have a recipe here that is actually from food network it is a little different because it is a grilled chicken Parmesan instead of fried. Now me being a guy who likes a lot of fried food I wasn't sure if I was going to like it but it is actually pretty darn good The only thing I did different was I used Newman's Roasted Garlic Tomato sauce instead of the one that is the recipe (I was being lazy and didn't feel like making the sauce ) But I am sure since it is from Giada De Laurentis it is probably pretty good as well anyway here is the pic and the recipe I did go a little overboard with the cheese but I love cheese LOL!:

Ingredients

3 tablespoons olive oil
1 teaspoon chopped fresh rosemary leaves
1 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh Italian parsley leaves
Salt and freshly ground black pepper
8 (3-ounces each) chicken cutlets
1 1/2 cups Simple Tomato Sauce, recipe follows or purchased marinara sauce
1/2 cup shredded mozzarella
16 teaspoons grated Parmesan
2 tablespoons unsalted butter, cut into pieces

Directions

Preheat the oven to 500 degrees F.

Stir the oil and herbs in a small bowl to blend. Season with salt and pepper. Brush both sides of the cutlets with the herb oil. Heat a heavy large oven-proof skillet over high heat. Add the cutlets and cook just until brown, about 2 minutes per side. Remove the skillet from the heat.

Spoon the marinara sauce over and around the cutlets. Sprinkle 1 teaspoon of mozzarella over each cutlet, then sprinkle 2 teaspoons of Parmesan over each. Sprinkle the butter pieces atop the cutlets. Bake until the cheese melts and the chicken is cooked through, about 3 to 5 minutes.
Simple Tomato Sauce:

1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.

Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.

If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

Not sure how many other gents out there asked but I know that I pmed Bailey about doing a dinner date right after I saw the thread and the pictures. I know I want to set this up just need to find the time to get away for a few hours to enjoy the great food and company. I will gladly be the guinea pig for this effort if no one beats me to it. I love trying new things and after my initial meeting with Bailey, I would be a fool not to be willing to try anything with her. Just my $0.02.

German Fried Potatoes:

First put several whole un-peeled potatoes in a pot and boil them till they split or get soft. Run cold water over them to cool. Pour off the water and place in refrigerator overnight.

Next day when ready to prepare, peel and slice them. In a skillet a little butter some small pieces of onion, and fry them up till you get a little brown on the edges, spice to taste with salt and pepper, add a little paprika if so inclined..
