I just got my first review, but the member is deleting their profile in a few days, will my review from them still show and be valid?

Not a mod, but in general,

1. A member is rarely "deleted" but instead either has their account disabled, with all of their posts still showing and their name intact or

2. Member is "guested" with their name changed to Guest & some numbers after it, and again all of their posts remaining.

Rarely would a review be removed or deleted unless the mods determined it was bogus, personal information was revealed, or some very bad things could happen because of the review. If the reviewer does not specifically ask to have it removed with a strong reason why it should, it should be there for eternity, or at least as long as Al Gore can keep the world wide web intact.
