Bobby Flay's Mesa Grill (in Caesar's Palace) is exceptional, but expensive.
The Cuban Cafe (2055 E Tropicana, near UNLV) is very good, authentic, and not expensive. Good ropa, good Cuban sandwiches, good milkshakes.

The restaurant on top of the Stratosphere. Awesome view, great food and if you make a reservation it's free to go to the top ( they charge to go up there ). Make your reservation for sunset. Beautiful!

If you're into pizza I would recommend Grimaldi's at the Venetian / Palazzo. Some of the best pizza in town and very affordable.

Depending on what you want there are many great places in Vegas. If you are on expense account or someone else is otherwise picking up the tab, any of the top name joints in a casino, such a Bobby Flay's will be dependable. The Golden Steer, just off The Strip is a classic high end steak house that has been around for years, and most of the well known people from the Rat Pack era who frequented the place had tables or booths named after them. On the other hand, if you want to experience some great funky places, just do a search for "DDD Las Vegas" as there are many small out of the way places that have been featured on that show. I've been to a few and they have always been good. If you want to go seriously retro there is Bob Taylor's Ranch House, which was Elvis's prime (no pun intended) go to steak house back in the 50's and 60's. It is virtually unchanged and when available they have an interesting smoked and then grilled prime rib.

If you just want a great burger, go to Gordon Ramsay’s just inside Planet Hollywood. Jasmine’s in The Bellagio does great Chinese....and you get the view of the fountains. For Italian try the Lavo at the Palazzo..... and of course you can’t beat Hooters for wings! ;-).

It's called Hidden Pizza and it is good, no signs that I know of, kind of across from STK (which I find so/so and expensive. Giada's for Italian, Strip House in Planet Hollywood has good steaks, great service and reasonable prices. StripSteak in Mandalay is also good but pricier.
