I seriously HATE making traditional pie crust. I've made over 100 traditional crust pies and everytime it's either too thin, too thick, or just plain uneven which is a pet peeve of mine. Flaky and tender is easy. Rolling out the right even thickness is just an exercise in futility for me. I don't want to overwork the dough so I'm left with uneven pies.

If I'm making a quick crust for savories to use up veggies from the night before I'll cheat and use an oil crust. For desserts I normally either end up using a shortbread cookie dough as my crust or various cookie/cracker crusts to avoid having to make ice water crusts.

I'm a southern girl so sweet potato pie with a candied pecan topping (or marshmellow topping for kids) is a my go-to.

I agree...its a pain in the ass to make. Its hard to get it right, but when you DO its so much better than anything you can buy in the store.

Its especially great with a cheese and bacon home made quiche.

My go to dessert is a variation on the New Orleans restaurant Commanders Palace famous bread pudding. Takes patience to get it right, cause it cooks for about 4 hours...but in the end its worth it.

Dang those pies look so delicious. I agree with SA about trying to get the pie crusts right. Like i said, I know homemade crust tastes better but it is just way more convenient to buy the store bought.

Oh Commanders Palace is one of my top 5 fav places in the U.S. I have a signed cookbook from the chief. I was so excited until I actually looked at that cook book and realized it was waaaaay beyond my capabilities. So back to store bought pie crust I go!!!
