I moved from Copperfield in November.
I sure did miss conveniences like Whole Foods. But if you have children you can't beat the cost of living and the schools are better than HISD. I would converse with some of the teachers and they actually enjoyed their jobs. HISD teachers acted more like burned out prison wardens.

Taco trucks are in Bearcreek which 10 minutes from Katy.
I loved the tostados. They would load them up with beef, avacodo etc. My Caucasian friends were not brave enough. More for me. LOL!

Sadly, I took the original comment to be a very respectful recognition of some of the valuable contributions our Hispanic brethren make to our daily society, such as landscaping and similar crafts.
I realize it takes all kinds, but this "looking for a liberal cause or offensive unjustice" is a little much for me. In my humble opinion, the great people of Katy contribute to bettering society by being open minded enough to hire folks to perform jobs they want.
Many of us love and respect Hispanics, their culture, and their contributions.
