If thats so, then youve eaten this mans BBQ and he now has his own trailer so no need to go to Franklins and waste your day waiting. Granted depending on what time you go their is still a bit of a wait but nothing like Franklins.

Pretty good food but definitely not worth the wait especially if you wait in line for 2 1/2 hours and then they run out !!!
The guy that runs the place is one of those hoity-toity people that knows a bunch of rich people.
I hate waiting and I definitely don't want to stand out in the heat or cold to wait for some food!

I like Larry's in Htown area, it's not overly expensive and you walk in and start eating!

No real secret to Aaron's brisket. Just find a good brisket and good smoke. He simply uses Kosher salt and pepper. That's it. Lots of time, too. Be patient and try that recipe.

Also, he quarters his briskets when he slices them, so that makes a difference in the taste too.

He does a great job, but it's not magic!

What do you mean by quarters his briskets? Are you saying he removes the flat from the point and then cuts each in half?

Absolutely agreed. I've eaten them all and nothing comes close to Franklin's. I've stood the line six or seven times now. It has been worth it each time. But also, each time was an occasion, along with a group of out of town friends. So, it is a lot like tailgating.

Actually, he cuts the brisket lengthwise from side to side, separating the dry from the moist and then in half from the top...

You'll have four distinctly different textures from which to choose, and last time I was there, they showed me the cross section of each. The fat cap part wasn't that thick, so I took some of it. Incredibly moist.

I'd never seen it done that way.

At Stiles Switch (my new fave, btw) they seem to cook it so long that it's all real moist and fall-apart tender. I just ask for a little bit of brisket and I get a couple of bites of all parts of the roast.

I've tried Franklin's recipe and slice at home. It was good, but I think I probably should have given it a few more hours. I'm just too lazy to get up at 3:30 am for a smoke.
