IIRC, at most Memphis 'que joints (at least the ones I frequent) you do have a third choice: "muddy".

That's where they sauce the dry rub ribs before serving. Also, if you get a full rack you can specify a kinda "half and half" plate, where you get half a rack dry and half a rack wet, in case you want to compare the two directly.

I think we’re pretty much screwed no matter what we do. Just a matter of how fast. What you say might well be true in the near term.
