I am a new hobbyist and Ive noticed that different memeber statuses. I have paid for a premium before but how does one become a valued poster?

Actually, "Valued Poster" status is a simple title for one who does not have Premium Access. You do, so that doesn't apply. You can change the "Premium Access" title under your name in the User CP under the "Edit Your Details" section.

The Valued Poster" title is something the site adds to a handle undercertain circumstances prior to Premium Access being attained or purchased. I don't know the exact reason it shows up but have guessed over time it has to do weith the number of posts.

Having Premium Access and being able to select your own title is a much better solution.
