Have you tried stuff zucchini or spaghetti squash yet? If your interested let me know and I'll bastardize up the recipe. It won't be as awesomely done as yours but I'll get you the important stuff lol

Thanks! I haven't, but I have been wanting to. No need for anything elaborate, just basic instructions are great.

Made this morning: Keto bacon and egg breakfast pizza accompanied by fresh avocado slices and blackberries in Bulgarian yogurt.






Pizza crust recipe is Fathead Pizza with my normal modification of substituting coconut flour for the almond flour as I find the almost flour crust a bit too heavy. This was really good!

Not really a recipe but an idea for a quick, nutritious keto snack:




Avocado halves stuffed with sour cream (cream cheese would also be good) and sliced black olives. I had a few macadamias on the side.

Last night's dinner was "spaghetti" - zucchini noodles with meat sauce and stuffed mushrooms.

No real recipe, I just pressure cooked the zoodles in my Instant Pot for 5 minute on high pressure and drained them. Also sauteed some sliced mushrooms in fresh garlic and olive oil, then added in some grass fed ground beef and mixed with the mushrooms and cooked until the beef was cooked. I didn't do the tomato sauce myself, I can't do better than Rao's Homemade, a very low carb brand found at most natural food stores. The stuffed mushrooms I just bought like that (after checking the label for no objectionable ingredients) and heated them up.

Attempted to make a keto burger and fries last night. It wasn't a total success, but part of it was.






The bun was based on an almond flour recipe and I didn't really like it. It wasn't that it tasted bad, just that it didn't taste or have the texture of a hamburger bun. It was moist and dense, almost like a cake. In fact I think I want to try that recipe again and add some flavorings for a keto sweet treat. Seems like it would be good for that.


The fries were really good though. I used jicama instead of potatoes. I started out using a recipe involving baking them in the oven, but I have a deep fryer to I just decided to wing it. Jicama is a lot more resistant to cooking than potatoes, so after cutting the jicama into strips, I boiled the strips for about 20 minutes, then dryed them off thoroughly and deep fryed them in coconut oil until they were golden brown. These were really good, if a bit labor intensive.
