Depends on your interests--- Palo Duro Canyon is an amazing place to go when it's not 110 at the bottom of the canyon so Amarillo is the destination there. Also, if you are into horses then there is a lot to do there. Canyon has one of the states best and biggest museums on the campus of West Texas State University.
In Lubbock there is a lot of Rock & Roll and Country Western history if that is your thing. Also a younger crowd with Texas Tech here.
Midessa if you are interested in some history of the oil & gas industry.
Abilene has several types of museums and historically important sites.
San Angelo has a historic downtown and you can cruise the Concho River.
El Paso has many museums and lots of Mexican and Spanish heritage places to visit.
Vacations don't always need to be that resort on that tropical island.....
